Chef Laurent Dupal’s core product line is the essence of French pastry and includes
croissants, pains aux chocolats, chaussons aux pommes, pains aux raisins, and brioches known collectively as viennoiserie. Using only 100 percent
pure butter, the best flours and complimentary ingredients, he creates
these classic French breakfast pastries in both the traditional sizes,
and as elegant miniatures so that his customers can sample the full viennoiserie
line at a single sitting.
To complement the viennoiserie, luscious cakes boasting a full
array of texture and flavor combinations include poire William, fraisier, and Black Forest, for example, as well as other traditional items such
as quiches and flan are available. Dupal also makes crumbly
butter crust tarts filled with delicious crème patissière,
and topped with fresh sweet
fruit such as raspberries, kiwi, and strawberries. The plum
and apple tarts he offers are set in handmade puff pastry,
rendering a flaky textured crust
that is as light as air against the moist, caramelized fruit.
Chef Dupal can also accommodate special requests including
seasonal and holiday pastries, saying that if you can dream it, he and
his dedicated staff can create it.
